Veggie Cowboy Bake

Description

A hearty, meat-free twist on the classic cowboy casserole, filled with delicious vegetables and a creamy, cheesy sauce. Perfect for family dinners!


Ingredients

  • 1 lb frozen tater tots
  • 1 cup almond milk
  • 3 tsp flour (gf, if needed)
  • 4 Tbsp olive oil
  • 7 oz vegan sour cream
  • 1 15 oz can corn, drained
  • 2 tsp hot sauce
  • 5 oz vegan cheddar, shredded
  • 3 cloves garlic, minced
  • 1/3 cup onions, chopped
  • 7 oz vegan ground beef
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 405°F. Set aside an 8×11 inch casserole dish.
  2. Bake the tater tots according to package instructions until golden and crispy.
  3. Heat 3 Tbsp of olive oil in the casserole dish. Stir in flour, then gradually add almond milk. Cook until the sauce thickens.
  4. Add vegan sour cream, corn, half of the vegan cheddar, and season with salt and pepper. Remove from heat once combined.
  5. Heat the remaining oil in another pan. Add onions and garlic, cooking until fragrant. Add vegan ground beef and cook until browned. Stir in hot sauce and season with salt and pepper.
  6. Combine the beef mixture with the white sauce in the casserole dish.
  7. Layer half of the corn mixture, followed by tater tots. Repeat and top with remaining vegan cheddar.
  8. Bake for 10 minutes until the cheese is bubbly and golden.

Notes

Make it spicy by adding more hot sauce or diced jalapeños.

Add extra veggies like bell peppers or zucchini for more nutrition.

Prep ahead by assembling the casserole a day before and baking when ready.
